Bacon soup is a soup made with bacon. Generally a number of vegetables are added[1] and often a thickening agent such as pearl barley, lentils[2] or corn flour. It can be added to Italian minestrone soup to enhance the flavor

 


🥓 Creamy Bacon Soup Recipe

🍲 Ingredients:

  • 6–8 slices thick-cut bacon, chopped

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons flour (for thickening)

  • 3 cups chicken broth

  • 1½ cups milk (or half-and-half for creamier version)

  • 1 cup potatoes, peeled and diced (optional, for a heartier soup)

  • Salt and pepper, to taste

  • ½ teaspoon smoked paprika (optional, but delicious)

  • 1 cup shredded cheddar cheese (optional, for cheesy version)

  • Chopped chives or green onions for garnish

🔥 Instructions:

1. Cook the bacon:

  • In a large pot or Dutch oven, cook chopped bacon over medium heat until crispy.

  • Remove bacon with a slotted spoon and set aside on a paper towel. Leave about 1–2 tablespoons of the bacon fat in the pot.

2. Sauté aromatics:

  • Add onions to the bacon fat and cook until soft and translucent (about 4–5 mins).

  • Add garlic and cook for another 30 seconds until fragrant.

3. Make the roux:

  • Sprinkle in the flour and stir constantly for 1–2 minutes until lightly golden.

  • Slowly whisk in the chicken broth to avoid lumps.

4. Simmer & add goodness:

  • Add milk and diced potatoes (if using). Bring to a simmer and cook until potatoes are tender (about 15–20 minutes).

  • Stir in smoked paprika and season with salt and pepper to taste.

5. Finish & serve:

  • Stir in cheese (if using) until melted and smooth.

  • Add most of the crispy bacon back into the soup, saving some for garnish.

  • Serve hot with chives/green onions and extra bacon on top. Maybe even some crusty bread? 👌

🔁 Variations:

  • Cheesy Bacon Corn Soup: Add 1 cup of sweet corn kernels.

  • Bacon & Beer Soup: Replace ½ cup of broth with your favorite lager or ale.

  • Low-carb version: Skip the potatoes and flour; use heavy cream for richness.
