🇧🇬 Bob Chorba – Bulgarian Bean Soup Recipe
🧾 Ingredients (Serves 4–6):
Main Ingredients:

Dry white beans – 1 cup (soaked overnight)

Onion – 1 large, chopped

Carrots – 2, chopped

Celery stalk – 1, chopped

Tomatoes – 2 medium, peeled and chopped (or ½ cup canned tomatoes)

Garlic – 2–3 cloves, minced

Vegetable oil or sunflower oil – 2 tbsp

Bay leaf – 1

Paprika – 1 tsp

Dried savory (чубрица / chubritza) – 1 tsp (or thyme as substitute)

Salt – to taste

Black pepper – to taste

Parsley – for garnish
Optional Add-ins:

Smoked bacon or sausage – ½ cup (for non-vegetarian version)

Flour – 1 tsp (to thicken slightly, optional)

Hot red pepper – if you like it spicy
🍳 Instructions:

Prepare the beans:

Soak dry beans in water overnight (8–12 hours).

Drain and rinse. Then, boil the beans in fresh water for 10–15 minutes, discard the water, and rinse again (this reduces bloating and bitterness).

Cook the soup:

In a large pot, heat oil and sauté the onion, carrots, celery, and garlic until soft.

Add paprika and stir quickly (don’t burn it).

Add soaked beans, chopped tomatoes, bay leaf, salt, and pepper.

Pour in 5–6 cups of water. Bring to a boil, then reduce heat and simmer for 1 to 1.5 hours, until beans are fully soft.

Add flavoring:

Stir in dried savory (or thyme), and adjust salt/pepper to taste.

If using meat: sauté bacon or sausage in a separate pan, then add to the soup in the last 20 minutes of cooking.

Optional: Mix a teaspoon of flour with a bit of water and stir it in to slightly thicken the soup.

Once everything is tender and flavors are combined, turn off heat.

Sprinkle with chopped fresh parsley just before serving.
