🍲 Butajiru (Tonjiru) – The Comforting Japanese Pork and Miso Soup
By Dhurga | November 8, 2025

🇯🇵 Introduction

Butajiru (豚汁) — also known as Tonjiru, meaning “pork soup” in Japanese — is a warm, hearty, and flavorful dish made with thinly sliced pork, vegetables, and miso paste.
It is one of Japan’s most beloved comfort foods, often enjoyed during cold seasons or as a nutritious side dish to rice.

With its rich broth, tender meat, and earthy miso aroma, Butajiru perfectly balances protein, fiber, and umami, making it both satisfying and healthy.

🍖 What Makes Butajiru Special?

While it’s similar to miso soup, Butajiru is heartier — the addition of pork and root vegetables makes it a complete, filling meal.
It reflects the simplicity of Japanese home cooking, where wholesome ingredients are used to create deep flavors without heavy spices or fats.

🧺 Ingredients (Serves 3–4)

Main Ingredients:

  • 150–200 g thinly sliced pork belly or shoulder

  • 1 tablespoon sesame oil

  • 4 cups dashi stock (Japanese soup base)

  • 3 tablespoons miso paste (white or mixed)

Vegetables:

  • 1 medium carrot (sliced into thin rounds)

  • 1 small daikon radish (peeled and sliced into half-moons)

  • 1 medium potato (peeled and cubed)

  • ½ onion (thinly sliced)

  • 1 piece konnyaku (optional – Japanese yam cake, cut into thin strips)

  • 2–3 green onions (for garnish)

🔪 Preparation Steps

Step 1: Prepare the Ingredients

  1. Cut pork into bite-sized pieces.

  2. Peel and slice all vegetables evenly to ensure even cooking.

  3. If using konnyaku, boil it briefly for 2 minutes to remove odor and set aside.

Step 2: Sauté the Pork and Vegetables

  1. Heat sesame oil in a deep saucepan.

  2. Add pork and sauté until it turns slightly golden.

  3. Add all vegetables and stir-fry for 3–4 minutes to release their aroma.

Step 3: Add the Dashi Stock

  1. Pour in the dashi stock and bring to a boil.

  2. Skim off any foam that forms on the surface.

  3. Lower the heat and simmer for 10–15 minutes, until vegetables are tender.

Step 4: Mix in the Miso Paste

  1. Turn off the heat, and dissolve the miso paste slowly using a ladle and chopsticks (to prevent lumps).

  2. Turn heat back on to low — do not let it boil after adding miso, as it affects the flavor.

Step 5: Serve and Garnish

  1. Pour the soup into bowls.

  2. Garnish with finely chopped green onions.

  3. Serve hot with steamed rice and pickles for a wholesome Japanese meal.

🍽️ Serving Suggestions

  • Pair with onigiri (rice balls) or Japanese pickles for a traditional meal.

  • Add tofu cubes or mushrooms for more nutrition.

  • For a winter twist, sprinkle a little shichimi togarashi (Japanese chili powder) for mild heat.

🌿 Health Benefits

  • 🧡 Protein-rich: The pork provides high-quality protein and essential nutrients.

  • 🥕 Fiber-packed: Root vegetables promote digestion and satiety.

  • 🍜 Probiotic goodness: Miso adds gut-friendly bacteria and enhances immunity.

🌸 Conclusion

Butajiru (Tonjiru) is a warm bowl of Japanese comfort and nourishment, blending tender pork, hearty vegetables, and savory miso into a simple yet deeply flavorful soup.
Whether served as a side or a main course, it brings comfort, warmth, and tradition to every table — a true taste of home in every sip.
